Apple Crumb Cake
Welcome to part II of this week’s cake fest. This one makes an awesome breakfast or brunch treat… or save it for dessert, heated with a big scoop of vanilla ice cream. It is National Ice Cream Month after all (wink wink)

For the apple crumb cake, I modified Brown Eyed Baker’s New York-Style Crumb Cake, which I love. The apple one turned out well, though next time I’d double the apples and also increase the amount of cake on the bottom layer. But my favourite crumb cake so far is still my Orange Cinnamon Corn Crumb Cake. (By the way, if you’ve ever been frustrated by butter measurements. Check out Brown Eyed Baker’s awesome chart. I’ve printed it out and keep it at the top of my recipe binder.) Ready for some appley crumb cakey goodness? Here we go:






Here’s what you need:
- 1 1/4 cup flour
- 1/2 cup brown sugar
- 1/4 tsp baking soda
- 1/4 tsp salt
- 70g unsalted butter (cut into pieces -softened, but still cool)
- 1 egg + 1 yolk
- 1 tsp vanilla
- 1/3 cup buttermilk
- 1/4 cup apple juice
- CRUMB
- 1/2 cup brown sugar
- 1 tsp cinnamon
- pinch salt
- 113g butter
- 1 3/4 cup flour
- APPLES
- 2 pink lady apples (cut into small pieces – I used one, but would definitely double)
- 1/4 cup apple juice
- 6 tbs brown sugar
- 1 tbs cinnamon
- GLAZE
- 1/2 cup powdered sugar
- 2 tbs of remaining apple mixture
- a drop of cream
Here’s what you do:
- Heat oven to 160C/325F. Line 8×8 pan with parchment paper.
- Peel and cut apples. Add apples, 3 tbs brown sugar, and apple juice to small pan. Mix and heat. Leave to boil away for 5-10 minutes.
- Make cake batter. Mix flour, sugar, baking soda, and salt in medium bowl. Add butter a bit at a time, mixing with electric hand mixer. Add egg, yolk, vanilla, buttermilk, and juice.
- Make cake crumb. Combine all crumb ingredients. Use hands to break apart into pea sized balls.
- Get to layering. Start with a thick layer of cake batter (about 2/3 of mix). Next use a slotted spoon to scoop caramelised apples out of pan and make them the next layer. Now sprinkle with cinnamon and remaining brown sugar. Top with remaining cake batter. Finish by spreading crumb. Bake for 35 minutes (or until tester comes out clean)
- While cake is baking, mix up glaze.
- Pour over still warm cake. Let cool and add flair =)
