No Bake Cookie Bars
I found something the other day, something that looked too tempting to resist. She called them no-bake cookie bars, sounded normal enough. Oh but these things are anything but normal. I made them – so simple, so quick, added some speculoos spread (everything is better with speculoos spread), cut one up and took a bite. Wow and yum. Major sugar rush – oh the white chocolate and the cookies and the speculoos. This one is too good to pass up, especially when covered in chocolate. Thank you Cookies & Cups! Ready, set, go:





Here’s what you need:
- about 30 crushed vanilla sandwich cookies
- 300g chopped white chocolate
- 1 can of sweetened condensed milk
- 1/2 cup mini chocolate chips
- 1/4 cup speculoos spread
Here’s what you do:
- Melt white chocolate and sweetened condensed milk together over medium heat.
- Stir in crushed cookies.
- Spread into baking paper lined square pan (preferable 9×9 but it depends on how thick you like your cookie bars)
- Press mini chocolate chips into dough.
- Warm speculoos spread in the microwave for 20 seconds. Drizzle over cookie bars.
- Refrigerate. Find some kind of distraction to keep you from dipping into the bars before they’ve chilled (like giant cup of tea)
- Cut and enjoy =)

My mom is going to pick up some speculoos spread for me when she goes to Boston! This recipe looks so decadent.
Is that a tube of sweetened condensed milk? I find it interesting when packaging is different in different countries…I always associate condensed milk with a can!
We can get it in a tube or a can. What I love about the tube is that it’s sold like a sports drink, with a guy on a mountain bike shooting some into his mouth after a long ride =p (that and it’s easy to use some and seal afterwards, unlike the can) Can’t wait to hear what you think about speculoos!
LOL, do people actually use it as a post-workout snack??
I’ve not seen it, but I have seen people just eating it from the tube as if it were normal…
