Valentine’s Day is always a fun one – that is, at elementary school where you gave EVERYONE a card and EVERYONE got candy. It got a little less fun in middle school when people started to pick and choose their friends, and a little more fun when I discovered the special edition chocolate and decided not to care about who got a rose in home room. Anyway… 3 years ago, it became even more fun. “More fun than chocolate?!” I hear you asking, “What’s more fun than chocolate?” Well, three years ago, on a snow-filled magical day I married my best friend.
Now that’s worth celebrating! So this week I’m going to share some fun desserts for 2 to celebrate. It all starts with these great funfetti cupcakes. To make them extra special, I made mine with heart-shaped sprinkles.
There ended up being a little too much batter for the two cupcakes – so if you like to lick the bowl, this recipe is designed for you =p
I was trying to be good and ended up filling mine slightly to high – oops. Clean up on aisle 9…
Still, the extra spilled off the sides gave me something to taste, so I knew they’d be good when I served them later. Time to put together some frosting.
For a quick healthy frosting for two, simple combine 1 packet vanilla sugar, 1 tbs of butter, 1 tbs of greek yoghurt, and roughly 1/4 cup powdered sugar. Add the powdered sugar a little at a time till you reach your desired consistency. Now frost those cupcakes!
