1 Baking Resolution Down – Pretzel Rolls
Remember my baking resolutions for 2013 (I also plan on making these)? Well, I’m happy to report that I’ve already crossed one off the list. I made pretzel rolls, whohoo! Time for the oh so satisfying crossing off of the list… drumroll please -
- Use a cookie press (spritz cookies?)
- Make 7 layer bars (peanut butter chocolate please)
- Some kind of bagel. I’ve never been terribly successful before and I love love love bagels!
- Scones of some variety
Much better =)
And I didn’t just make simple pretzel rolls. I made it into a whole dinner for two. I know that Valentine’s week is officially over, but that doesn’t mean that the romantic dinners have to end. Why not try this one – it’s a healthy sausage roll. Perfect for game day or really any comfort food craving.
Sausage rolls are one of those foods I was introduced to when I married a Brit. They’re essentially a high-calorie, high-fat, high-taste party food – sausages wrapped with pastry, baked and then dipped in some kind of sauce. They’re yummy, but they certainly wouldn’t be described as healthy.
Since Rebecca, of Ezra Pound Cake suggested stuffing the pretzel rolls, I thought why not and pulled out my favourite chicken sausages, spinach and light cheese. Yum yum!
First I prepared the dough and let it rise. Then before the second rise, I stuffed it with the goods, sealed the pouches, and left it to rise again.
Now on to the first stage of cooking – boiling the pouches in a baking soda bath.
Once boiled, I shook off as much water as I could and placed the pouches onto an oiled and cornmeal lined tray to bake.

Here’s what you need (to serve 2):
- 1 cup bread flour
- 1/4 cup wheat germ
- 1/4 cup wheat bran
- 1/2 envelope of quick rising yeast
- 1/2 tsp brown sugar
- 1/2 cup + 1 tbs hot water (55°C)
- Filling for your rolls (I went with chicken sausage, spinach, and light gouda)
- 6 cups water and 1/4 cup baking soda for baking soda bath
- cornmeal to line baking pan
Here’s what you do:
- Combine flour, wheat germ, wheat bran, yeast, and sugar in food processor. With processor running, add hot water. Process to knead for 1 minute.
- Place in oiled bowl to rise for 35 minutes to an hour.
- Cook and prepare filling.
- Roll out dough. Fill 3-4 pouches with fillings.
- Leave to rest for 20 minutes.
- Bring water to a boil, add baking soda (will bubble).
- Preheat oven to 170C. Line baking sheet with parchment. Oil and sprinkle with cornmeal.
- Drop pouches into boiling water. Leave one minute, then flip with slotted spoon. Allow to cook an additional minute. Remove from water and place on baking sheet.
- Bake for 25 minutes. Let cool for 10 and enjoy =)
